Food historians can trace the origins of this popular preserve back to Roman times when they would slowly cook quinces with honey.
When cooled this mixture would set – Roman marmalade! Made now from citrus fruit, sugar and water it comes in many flavours.
We made four :

- Whisky Marmalade.
